Christmas Cupcakes!

I wanted to share these adorable Christmas cupcakes with you !  They are the concept of the very clever Cupcake Queen, Karen Tack.  Her book, “Hello, Cupcake!” is the most fun baking book you’ll ever find!  While these cupcakes aren’t from the book there are plenty of ideas in there to keep you in cupcake heaven for a long time!  I modified mine slightly from the original designs, so I could use ingredients which were more readily available.   They are super simple and fun to make, it was a great afternoon project with the kids!

Rudolph is a chocolate cupcake with chocolate frosting, animal crackers for antlers, and a red M&M for his nose!  His eyes are made by cutting a mini marshmallow in half and then putting a small piece of chocolate in the center.  Easy peasy!

Frosty is made of a white cupcake and fluffy white frosting which has been dipped into sugar to give the appearance of snow.  His eyes are upside down chocolate chips and his mouth is made from tiny bits of chocolate.  An orange slice gummy sugared candy has been cut and formed into the shape of a carrot for his nose.  The top hat was a little tricky and if you look closely you’ll see mine is in pieces!  I used a chocolate covered mint cookie that I cut one side off of to form the brim (this is the broken part – but it still works) and then cut both sides off the remainder of the cookie to form the main part of the hat.  Voila! Frosty the Snowman!

These little Poinsettias cupcakes are so sweet!  This one is also a white cake with fluffy white frosting.  To make the flowers just take some mini marshmallows, cut them in half, shape them a bit with your fingers and then dip the sticky side into red sugar.  Form your flowers, add a bit of yellow gummy candy for the center.  The leaves are made with green gummy candy, again cut and shaped.  So pretty!  Have fun!
